Toasting Nuts/Seeds

How the raw nuts and cheese is the best way to maximize their flavor. It brings out their oils and caramelizes any sugar in the seeds, making them roasty and delicious.
We prefer to toast nuts and seeds in the oven. Any temperature between 325 and 350 is great. First, spread them out on a sheet tray. 
No need to season them or add oil. Just pop them in the oven and toast, but pay attention! You'll toast pretty quickly. 
In any kitchen, nuts and seeds are the most commonly burned ingredients to be careful. Also, be aware that older seeds and nuts have a limited shelf light and will eventually turn stale. You'll notice an off smell with the oils have gone rancid. 
I store my nuts and seeds in a freezer until I'm ready to toast them. Then I toast a small amount and use them in a week or so.
