I love finding ways to use the whole ingredient. 

First we begin by zesting: use a microplane to zest the citrus from tip to tail in one elongated motion. This is the most efficient way to zest. 

Next, use a paring knife or a serrated knife to remove the bitter pith. Trace the line where the pith and the citrus meet. 

Then remove each individual piece by sliding the knife on either side of each segment. 

I can then squeeze any remaining juice from the leftover pith to utilize a single citrus in 3 different ways! 

Remember, this same technique can be applied to limes, oranges or grapefruit! Zest has a concentrated citrus flavor and is often used in dressing, marinades, or baked goods. 

Pith tends to be bitter and is our only waste. Segments provide a lovely citrus bite to salads and juice can be used in all sorts of ways.
