This week’s chef notes:
Masa, also called Masa Harina, is a finely ground flour made from dehydrated masa (dough) made from corn that has been softened with alkali. You can typically find it near other Mexican ingredients in your grocery store. If you can’t find it, or don’t want to purchase a big bag, you can substitute 1 corn tortilla, broken into small pieces. Either one will help thicken the chili.
