Seranos are typically spicer than jalepeños. Choose whichever you prefer for the salsa verde and Nuoc Cham sauce for the pork skewers.
For quesadillas, use any combo of of queso oaxaca, monterey jack, mozzarella, cotija or pepper jack.
If you plan to add chicken to the cobb salad and the quesadillas, roast both at the same time and save a step later.
