Shopping List April 20th
This week’s chef notes:
Salad greens are used in 2 recipes: Hangar Steak Salad, and as a side to the Tortilla Española.
For optional sausage in the risotto, the easiest is to buy pre-cooked pork or chicken sausages, but you may find more interesting, raw varieties in your butcher counter. I love an Italian pork sausage (spicy or mild).
For the risotto, make sure to get a short grain rice that provides the right amount of starch. Arborio or carnaroli are the go-to varieties.
