Papas con Rajas Tacos
Papas con rajas tacos are a delicious combination of tender potatoes and smoky, sautéed poblano peppers, all wrapped in a warm tortilla. Simple and comforting! Just don't forget the chips and guacamole!

Chef Notes: Feel free to customize these tacos with your favorite hot sauce (I love Huichol and Hot Mama Salsa!), and any other favorite taco toppings.

Prepare the Poblanos▸ Char, steam and peel poblano peppers by charring them over a gas stove, under the broiler or with a torch until deeply charred. Place in a small bowl and cover with plastic wrap to steam. After 10 minutes, peel the peppers using a paper towel. Remove the stem and seeds and slice into thin strips around 1/4" thick.
Dice the potatoes into small cubes.
Place in a saucepan, cover with water, add a large pinch of salt and simmer for 5-7 minutes or until the potatoes are fork tender but not falling apart.
Make Potato & Poblano Mixture: In a large skillet, sauté the onion until translucent. Add the potatoes, poblanos and sour cream and stir to combine. Bring to a simmer them turn off the heat and allow to cool in the skillet for 5 minutes.
Finish
Warm the tortillas on the stove or in the oven.
Fill each tortilla wilth the potato poblano mixture.
Garnish with hot sauce.
Serve with chips & guacamole, or any other favorite Mexican sides!
