Charring and Steaming Peppers

Peppers have a tough outer skin that needs to be removed by charring then steaming. Using a torch, a gas cooktop or the broiler in the oven, char the peppers until deeply blackened. Immediately place them into a large bowl and cover with plastic wrap. The residual heat from the charring process will steam the peppers and soften the skin. After 5 minutes of steam, the skins will be easy to remove using a paper towel! Remove the stem and seeds and process as necessary.
