Shaoxing wine is a Chinese cooking wine that is a key ingredient in many Chinese. While I’d say it’s vital, and we will certainly call for it again, f you don’t have any (and don’t want to purchase), a good substitute is a dry sherry, mirin, or some dry white wine.
You can save your beet greens and use in place of the Swiss chard in the Salmon dish if you buy them with their tops on. Or, feel free to sub in spinach or another green like kale.
