This week’s chef notes:

  • The squash and apple salad calls for pepitas. You can purchase these, or save the seeds from the delicata and toast them in the oven (add a bit of olive oil and salt and place them on a tray at 375°F for about 8-10 minutes… keep an eye on them and make sure they don’t get too dark. You may hear them popping as they toast, this means they are nearly ready!

  • Feel free to substitute any salty, crumbly cheese for the cotija. Feta or a ricotta salata would be tasty!
