If you can’t find Mexican Crema, you can substitute ½ C sour cream + the juice of half a lime.
For the Nachos, cheddar, monterey Jack, or queso Oaxaca are all good melting cheeses.
Hanger, sirloin, or skirt steak are good substitutes if flank steak is unavailable.
