This week’s chef notes:

  • Black lentils are also called beluga lentils. If you can’t find these, any lentil that will stay intact during cooking would work, such as French green lentils de puy or Italian brown lentils.

  • If you can’t find tarragon, use basil or mint.

  • For the seasonal veg in the Green Goddess Dinner Salad, you can use the rest of the cauliflower from the pasta dish, or sub in zucchini, peas or greenbeans in summer, or roasted winter squash, sliced carrots or another favorite vegetable.

  • Anchoivies are usually in small cans or jars, and an opened container will last up to 2 months in the fridge in an airtight container.
