Our take on the classic American cheeseburger. Thin patties seared until the edges are crispy & lacy, then stacked with melted American cheese and all the right fixings. Add golden oven fries, and you’ve got pure comfort with a wink of nostalgia.

Yield: All recipes serve 2 people

Chef Notes: Skip a step and buy frozen fries from the grocery store.

Add your favorite burger toppings instead: swiss cheese and mushrooms bacon and avocado? You know the way!


Components

  • Burger Buns

  • Burger Patties

  • Special Sauce

  • Shredded Lettuce

  • American Cheese

  • Pickles

  • Oven Fries


Mise

Boil the Potatoes: Cut the potatoes into 1 1/2” wedges. In a medium pot, add:

  • 2 Qt Water

  • 2 T Salt

  • ½ t Baking Soda

Bring to a boil. Boil the potato wedges until the potatoes are par-cooked and barely fork tender, about 6-7 minutes. Drain and allow to cool slightly.

Prepare the Burger Condiments:

  • Portion the burgers into 4- 3oz balls.

  • Slice the tomato into ¼” rounds.

  • Slice the lettuce paper thin.

  • Slice the pickles into thin rounds.

  • Make Special Sauce by stirring together:

    • 2- 3 T Ketchup

    • 2 T Mayonaise

    • 1 T Yellow Mustard

Roast the Potatoes: Use ¼ C neutral oil to coat the bottom of a sheet tray. Lay the potato wedges onto the sheet tray. Roast at 450°F until golden and crispy, turning halfway through the bake so each side of the wedge browns evenly, about 30 minutes total.

Finish

Make the Burgers:

Heat a large skillet or a flat top over high heat. Add the portioned burger balls to the pan and using a flat spatula, press the burgers flat, applying a good amount of pressure to make them 1/4” thick.

Immediately season the burgers with salt and pepper. Cook the burgers until one side is amber brown, lacy and crispy. Flip and cook the opposite side. Once both sides of the burger are seared, remove from the heat and layer 1 patty, 1 slice of cheese, 1 patty, 1 cheese. Allow to rest and melt slightly.

Wipe out the used skillet and quickly toast the buns.

Build each burger by placing special sauce on the inside of the buns. Add 2 burgersand cheese patties to the bottom bun followed by pickles, tomato slices, shredded lettuce. Finish with the top bun.

Serve with fries on the side!
