Scallion Pancake with Fried Egg and Carrot Slaw
Scallion pancakes have long been part of the culture in China and Taiwan, where they’re a beloved street food snack. Once you’ve mastered the cinnamon roll technique, which creates flaky layers within each pancake, they’re a breeze to make — but if time is short, you can always find them in the freezer section of your local Asian grocery store, H-Mart, or even Trader Joe’s.

Chef Notes: We love using sunny-side up eggs here, both for their runny yolks and for their sheer visual appeal. Feel free to sub in your favorite style of egg — scrambled, poached, hard-boiled, you can’t go wrong — or omit altogether to keep it vegan.

Mise
Make Pancake Dough Add flour and boiling water to a mixing bowl, then mix with a fork until mostly combined. Slowly knead mixture together with your hands until smooth. Cover with plastic wrap and set aside to rest for 15 minutes.
Roll out Pancakes
Place dough on a flat surface and cut into four pieces. On a lightly floured surface, roll out each piece into a circle approximately 8 inches in diameter.
Brush each circle evenly with sesame oil and scatter minced scallions on top.
Starting with the edge closest to you, roll up each circle into a tube, then twist each tube into a snail shape by starting at one end and rolling toward the center. (The end result will look like a cinnamon roll.) Flatten each snail gently with a rolling pin, then roll out again into a seven-inch disc.
Cook Pancakes
Heat 2 T neutral oil in a frying pan over medium heat until shimmering.
Just before the oil starts to smoke, add the first pancake to the pan and fry for 3-5 minutes total, flipping when the edges of the pancake start to dry out.
Place the pancake on a cooling rack over a cookie sheet and repeat with remaining pancakes.
Make Slaw Combine cabbage, carrot, and remaining 2 scallions in a bowl, then season with a pinch of salt, a splash of rice vinegar, and a splash of soy sauce.
Fry Eggs Return pancake skillet to heat, adding a little oil if necessary. Fry eggs sunny side up and sprinkle with salt.
Finish
Plate two pancakes onto each plate, overlapping them slightly.
Top with a dollop of slaw, sliced avocado, and fried egg, and the hot sauce of your choice.
